Conservation of Mass/Matter

Today in 8th Grade we learned about Conservation of Mass! This law states that the amount of matter in a closed system remains the same even after a chemical reaction!
Think about the demonstration we viewed today:
We added 2 tsp of baking soda to a balloon, 50mL of vinegar to a flask, then placed the balloon over the flask WITHOUT allowing the baking soda to enter the flask! Then we found the mass of our system. We then dropped the baking soda into the flask and.......WOW! The balloon inflated! We found the mass again and amazingly enough, the mass remained the same! Why?!
